Yummy SOFT Gingersnap Cookies

2 C. sifted flour
1 tbs. ground ginger
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3/4 C. shortening
1 C. sugar
1 egg
1/4 C. dark molasses
cinnamon sugar

Sift dry ingredients together, except cinnamon sugar, and set aside. Beat shortening and sugar together until creamy. Add in the egg and molasses. Continue mixing while slowly adding the dry ingredients. Mix just until completely blended. Roll dough into 1" balls and then roll in cinnamon sugar.Bake at 350 for 10 minutes. Don't overcook! Makes 2 1/2 dozen.
