Cherry Chip Cookies

Delicious- slightly crunchy outside, soft-cakey inside!

1 Cherry Chip cake mix
8 oz. of softened cream cheese
1/4 C. softened butter
1/4 tsp. vanilla
1 egg

Cream the softened cheese and butter. Add the vanilla and egg. Slowly add the cake mix while mixing. Drop spoonfuls onto greased baking sheet. Bake @ 375 for 10-15 minutes. Makes about 30 cookies.

Peach Cobbler Bars

1 cup (2 sticks) unsalted butter at room temperature
2 cups granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
4 eggs
3 cups unbleached all-purpose flour
3/4 teaspoon salt

for the filling:

6-7 peaches, peeled and thinly sliced
1/4 cup brown sugar
1/2 teaspoon cinnamon

for the glaze:

1 cup powdered sugar
2 tablespoons cream
1 teaspoon pure vanilla extract


1. Preheat oven to 350 degrees. Grease a large cookies sheet with butter or nonstick spray. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar, until smooth and fluffy, about 2-3 minutes. Add in eggs, one at a time, incorporating well after each addition. Add in vanilla and almond extract. Slowly add flour and salt, and mix until just incorporated.

2. Spread three-fourths of the mixture into the prepared pan. Mix the peaches, brown sugar, and cinnamon in a medium sized bowl, and distribute evenly over the batter. Drop the rest of the batter by tablespoonfuls over the peaches, and bake for 25-30 minutes, or until the edges start to turn golden brown.

3. Whisk together the powdered sugar, water, and cream and drizzle half of the mixture over the warm bars. Allow to cool, cut into 3 inch squares, and drizzle over the remainder of the glaze.--

Pumpkin Bars

*Mix by hand*

1 c. oil
2 c. sugar
1 16 oz. can pumpkin
2 c. flour
2 t. baking powder
1 t. baking soda
1 t. salt
2 t. cinnamon

Pour onto cookie sheet.
Bake 350 20-22 minutes Cool and then frost.

Frosting:
3 oz. softened cream cheese
6 T. softened butter
1 t. vanilla
1 T. milk
Cream together
Add 3 c. powder sugar

Chocolate Halfway Bars

makes a 8 X12 pan1. mix together:
1/2 cup shortening (but it's better with butter)
1/4 cup sugar
1/4 cup brown sugar
2. add
1 egg yolk (save the egg white for later)
1 cup flour
1/2 tsp salt
1/8 tsp. bkg powder
1/2 tsp. soda
1 1/2 tsp. water
1/2 tsp. vanilla

Pat all this into greased 8 X 12 pan. Top with 12 oz. chocolate chip (milk choc. or semi-sweet)3. Topping:2 egg whites and 1/2 cup brown sugar, beater stiff. 4. Spread topping over chocolate chips and bake at 375 degrees for 25 minutes.

Peanut Butter Cookies

1/2 c shortening
1/2 c butter or marg.
1 c. peanut butter
1 c. sugar
1 c. brown sugar
2 eggs
2 1/2 c. flour
1 t. baking powder
1 1/2 t/ baking soda
1/2 t. salt

Mix first 6 ingredients blend remaining. Roll in to balls and flatten with fork.Bake 37510-12 minutes

Grandma Dille's Bannana Sponge Cookies

2 1/2 c. flour
2 t. baking powder
1/2 t. salt
1/4 t. baking soda
2/3 c. shortening
1 c. sugar
2 eggs
1/2 t. vanilla
1 c. chocolate chips
1 c. mashed bannanas

Mix and drop by teaspoon on greased cookie sheet.Bake 45010-12 minutes

Soft and Yummy Sugar Cookies

2 C. sugar
1 c. butter
2 eggs
1 t. vanilla
1 c. sour cream
5 c. flour
4 t. baking soda
1/2 t. baking powder
1/2 t. salt

Mix and Chill for a couple of hours or over night.Bake 375 8-10 minutes

Yummy SOFT Gingersnap Cookies

2 C. sifted flour
1 tbs. ground ginger
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3/4 C. shortening
1 C. sugar
1 egg
1/4 C. dark molasses
cinnamon sugar

Sift dry ingredients together, except cinnamon sugar, and set aside. Beat shortening and sugar together until creamy. Add in the egg and molasses. Continue mixing while slowly adding the dry ingredients. Mix just until completely blended. Roll dough into 1" balls and then roll in cinnamon sugar.Bake at 350 for 10 minutes. Don't overcook! Makes 2 1/2 dozen.

My MIL's Chocolate No-Bake Cookies

4 C. sugar
1 C. cocoa
1 C. milk
1/2 C. butter
6 C. oats
1 C. peanut butter
2 tsp. vanilla

Combine sugar, cocoa, milk and butter in large pot over med. heat. Bring to full boil and boil 2 min, stirring constantly. Remove from heat and add remaining ingredients. Drop by spoonful onto wax paper and let cool completely. Makes ~80 cookies.
